Corn doesn't have the gluten that wheat has. Gluten makes long protein chains in the dough, which keeps it elastic and strong.

Big corn tortillas would just crumble, and you wouldn't be able to fold them like a burrito.

In fact, burritos are also known as "tacos de harina": flour tacos. (Sure that could be maize flour, but I think with out "masa" it just means wheat flour)

i roll mine way looser than a taquito, so i can stuff them with cheese and squash.

i don't know how other people make them but i was taught to fry the tortillas real quick, so they're still malleable. then i sautee my filling and roll it up with a bunch of cheese. then i lined them up in a baking pan, put the enchilada sauce and cheese on top and bake until the cheese is melted.

I really don't like corn tortillas, but enchiladas are definitely GREAT.
Here's how my dad/ grandma makes them:

Get a bowl filled with Pato (or whatever the fuck sauce that is) tomato sauce. Put the uncooked corn tortillas in there and mix it around (same process as dipping bread in egg for french toast). Then lay the tortilla on the baking pan and fill it with cooked ground beef. Roll the tortilla. Repeat. At the end, top off the row of rolled tortillas with cheese.

they sell large corn tortillas at Oaxacan specialty stores and restaurants. the only one that i can think of is on Beethoven and Venice. Not to be confused with Tlayudas, which are super-gigantic corn tostadas. These are corn tortillas. but as someone else pointed out, they don't make good burritos.

They also sell cooked crickets with lime and chili.

no no no. you need to cook them on the stove like youre making a taco. if you want to cheat you can microwave them too, but they look cooler with the little burn marks. that's the only way they will fold.

when it comes to enchiladas, it can get a bit complex. even though it is one of the simplest food items. the way they're done in my region of mx is flash fried tortilla, this helps keep the moisture in the tortilla, avoiding the crumbling you got. filling will usually be just ranchero cheese wiff diced onions. salsa will usually be just onions, garlic, salt, and two or three of a variety of dried red chiles, usually found at the dried goods section of the mex market. you want sum good enchiladas, replace the traditional red sauce with mole....mmmmm orgasmic. I tink they're called swiss enchiladas I think. well, enough ranting. I looove me sum good enchiladas.

The trick to the valley, is that you have to get north of Burbank Blvd. here are a list of some awesome places to get mexican food in the valley:

Tacos el Oso (the one on Maclay)
The Shrimp Cocktail truck on Paxton, east of San Fernando
El Mexicano taco stand (i think it's on Victory in Van Nuys)
Rigos Tacos
Siete Mares (San Fernando Mission)

i've never been disappointed by any of the taco stands or trucks along the side of the road.

In the summer time get shaved ice at
666 Kalisher Ave, across from the catholic school

anything in San Fernando or Pacoima

Also, check out the best pizza at

the valley has some great spots! In Pacoima on Osborurne just west of the 5 there's a lil spot.. forget the name... and of course EL TACO LOCO two locations serving that ass one on reseda and one on lankershim.... too bad I dont eat carne asada anymore... so tasty.

wrong wrong wrong ....aaaaand wrong... what do al of those places that you mentioned have in common??? tacos. those places are taco stands. I tink we could all agree that mex food goes far beyond that. a very good window into mex cuisine is to just go to someones house. there is nothing better than home cooked mex food. there is ,however, a second best. "SOCORROS" on sherman way and kester and one on vic just west of van nuys. their corn tortillas are hand made and their steak picado with molcajete salsa is da bomb... as far as sea food there is MARISCOS COLIMA on vanowen just east of vineland. al you need there is a plate of fish ceviche ,a serving of camarones ahogados, followed by an ice cold michelada... mmmmmm nom nom...

if you go to tacos el oso get a burrito. the hot sauce is killah and if you go at the end of the day, they will fill their otherwise giant burritos until the tortilla rips.
