I've gone pretty much everywhere and I.Martin on Beverly has consistently outperformed all the cool boutique shops. It's not the choice of hipsters, but they have always taken great care of me with zero attitude and the service department really knows their shit. Tennyson is the service manager and will take care of you even if you don't have any ink or the right messenger bag.
That said, if you're heavily into the fixie thing Orange 20 is probably the best thing going and they have some cool shit you would be hard pressed to find anywhere else.
If you want to do-it-yourself check out The Bicycle Kitchen (east side) and Bikerowave (west side). Both are gold mines and a great place to meet riders. At this point, Bikerowave is FAR better stocked as it's still kind of undiscovered (Also Cubcamp leaves from there on Thursday).

In Santa Monica on Lincoln and Marine there's a shop called veloworx. Inside there is a man named Sugen. He knows all there is to know.
