Kale Salad with Spicy Peanut Dressing (vegan)

Recipe is from Chaya / M Cafe.
1 bunch kale
3/4 cup water
2 heaping spoonfuls of peanut butter
2 teaspoons of chili sauce
2 dashes of ground ginger (would've preferred fresh, but didn't have any)
dash of salt
Blanch the kale in 2 qts hot water for 2.5 minutes (thanks Tanya for the time tip). While the kale is blanching, combine other ingredients in a bowl to create sauce. Drain kale and rinse with cold water [to stop cooking.] Put kale back in bowl and mix in sauce. 5 minutes and pure deliciousness

now, does anyone have a good suggestion for vegetarian collard greens? im thinking something that involves parmagiano cheese.... inspirations, anyone?

Have you tried the kale salad at Elf? It's served with a harissa dressing that is the best thing I've ever tasted. Basically a bunch of garlic and spicy peppers with olive oil, balsamic, S&P and some secret spices.

i made some great collard greens the other night. instead of ham hocks, i used a parmigiano rind. here's the recipe
1 onion
1 shallot
1 bunch collard greens
parmigiano rind (the waxy part)
slice thin and sautee slowly
clean and chop collard greens, add after onions are translucent
cook until half-done
add water and parmigiano rinde and boil until collards are cooked
enjoy!
